This one comes from my American family. I’m lucky enough to have a wonderful family in California and whenever we go out to visit, we get my uncle’s signature margaritas (the secret recipe is loads and loads of tequila) and real life Mexican food made by real life Mexicans.
This salsa recipe comes from a community cook book my Auntie was given by some very talented local cooks. My mum loves it roughly chopped and chunky, I prefer it smooth and silky, each to their own.
1 beef tomato, roughly chopped
½ a red onion, roughly chopped
1 fresh chilli, roughly chopped
1 small bunch of fresh coriander, roughly chopped
1 teaspoon chipotle paste
1 wedge of lime juice
Salt and pepper to taste.
Threw it all into a blender and whizzed. Whizzed as much as I dared.
Served best fresh with extra coriander on top with tortilla chips or poured over fish tacos.
But, it taste great with most things, is there anything that doesn’t taste better covered in tomato and chilli?
Oh, and make sure to have a bottle of beer with a lime wedge dropped in to go with it.
