What a smasher. This is a beautifully cheap and simple meal to add a little spice to a warm summer’s evening. It’s a dumbed down and simplified version of a proper recipe on Jamie’s 15 minute meals.  I watched it one morning pretty hungover and tried to get close.

Easily doable in less than half an hour and much more filling than it looks. My old man ruddy loved it!

Ingredients

  • chicken, diced
  • mushrooms, diced
  • curry paste, tablespoon
  • spring onions, handful
  • turmeric, teaspoon
  • cumin seeds, teaspoon
  • paprika, teaspoon
  • green lentils, one tin
  • 2 naan breads
  • bag o’ spinach
  • a bit of cucumber
  • a bit of carrot
  • a few blobs of yogurt
  • a tearing of fresh coriander
  • cherry tomatoes

Method

  1. Toss the chicken and mushrooms and a big old blob of curry paste into a pan, give it a good old stir until evenly coated and dry fry until it starts going all crispy and smokey
  2. In another pan, soften the chopped spring onions with some turmeric, cumin seeds and paprika and once soft, stir in a tin of lentils until evenly coated
  3. Slide the naan breads into a warm oven for 5-10 mins to warm up
  4. Pop the spinach into a big flat pan, grate over some cucumber and carrot before pouring over the lentils and top with chicken and mushrooms
  5. Add yogurt, coriander and cherry tomatoes to serve
  6. Serve up with slices of Naan and a big old bottle of beer
