This is one of those recipes that always goes down a treat. This sweet and zingy salsa goes great smothered over some freshly grilled fish or served simply with a handful of chips. Either way, it’s best served fresh and with a cold beer.

 Ingredients (to make 4 portions)
  • 1 ripe mango
  • 1 ripe avocado
  • 1/2 a red onion
  • 1 fistful of coriander
  • 1 fresh chilli thinly sliced
  • 1/2 a lime
  • Teaspoon of salt

Method
  1. Dice, slice and tear the mango, avocado, onion, coriander and chili however you like it served (I always go big and chunky).
  2. Give the mix a good stir and squeeze over the lime juice.
  3. Add salt to taste.
  4. Tuck in.
