This is another firm family favourite taken from the cowboy contingent of the family. My mum and I both agree the best way to serve this is roughly mashed and super fresh, no faff just simple fresh zingy flavours.

Once you realise how easy it is to make and how much better it tastes than any shop bought alternative, i bet you’ll never go back.



1 ripe avocado, sliced (slice an avocado with none of the mess)

1 half of a red onion finely diced (chop an onion without the tears)

Juice from 1/2 a lime

1 fistful of coriander, roughly chopped

Salt and pepper to taste


Add the avocado to a large mixing bowl and mash well with a fork.

Add in the red onion and a good squeeze of lime juice. Stir in a good fistful of coriander.

If it lacks a bit of a punch add a little extra lime juice and if that still isn’t doing it, a drop of chilli paste will do the trick.
